Ingredients:
4 Chicken Breasts
| Rub:½ Tsp Paprika½ Tsp Cayenne½ Tsp Corriander1 Tsp Cumin1 Tsp Garlic powder1 Tsp Black peper 1 Tsp Salt2 Tbs Olive oil | Sides:1 Tomato finly chopped½ Onion finely chopped 1 Onion Sliced1 Robot peppers sliced (3 peppers in total) ½ Block cheddar cheese 2 Avocados. Pips and skins removedPickled jalapenos Sour creamFranks Hot sauce 1 Pack tortillas |
Method:
- Slice the chicken into strips. Then mix together the chicken and all the Rub ingredients and set aside.
- Mix the sliced peppers and onions with some olive oil and season with salt and pepper. The Fry them until glassy but not soggy.
- TIP 1: Use a griddle pan and slightly char the chicken and peppers, this gives it a lovely flavour.
- TIP 2: Put the oven on 100c to keep the peppers warm while you make the chicken
- While the peppers cook prepare the salsa. Just mix the finely chopped tomato and ½ onion in a bowl and season. Add a finely chopped chilli if you like a bit of heat.
- Prepare the guacamole. Wang the avos in a bowl and use the back of a fork to roughly mash them up until the desired consistency has been reached.
- Remove the peppers, place in the oven and cook the chicken in batches, placing the cooked chicken in the oven with the peppers.
- TIP 3: Place the peppers and chicken directly into serving bowls to reduce dishes and keep them warmer for longer
- While cooking the chicken heat the tortillas in a pan.
- TIP 4: Keep the tortillas warm and fresh by making a tea towel damp folding it in half and pacing it on a plate and putting it into the oven. As you finish cooking a tortilla on both sides place it into the tea towel.
- Once done, place everything on the table an allow everyone to help themselves.
- TIP 5: How I assemble my tortillas. Tortilla, sour cream, cheese, chicken and peppers, salsa, guacamole, jalapenos, roll and enjoy.
